National Chocolate Chip Day

I just learned about National Chocolate Chip Day this year. I am a chocolate lover and cannot believe I have been missing out on such an important holiday. This holiday is celebrated every May 15th and I’m sure over the years I celebrated by gorging on something with chocolate chips in it without even knowing I was being festive. In honor of this special holiday, I and am hosting a play date with 30+ mommies and babies/toddlers. Each mommy is bringing a dish with chocolate chips in it and for the sake of National Chocolate Chip Day we will eat to our hearts content. Below is a yummy recipe from Taste of Home using chocolate chips.

Icebox Sandwiches

1 package (3.4 ounces) instant vanilla pudding
2 cups cold milk
2 cups whipped topping
1 cup (6 ounces) miniature semisweet chocolate chips
48 graham cracker squares

Mix pudding and milk according to package directions and refrigerate until set. Fold whipped topping and chocolate chips. Place 24 graham crackers on a baking sheet; top each with about 3 tablespoons filling. Place another graham cracker on top. Freeze for 1 hour or until firm. Wrap individually in plastic wrap; freeze. Serve sandwiches frozen.

Ooooooooooooooooo A Holiday that is RIGHT up my alley! I've got the chocolate consumption in honor of this day under control. I had to make some cookies for the Honor Society reception and by golly there were a few extras that I ended up with so I had to take care of them. You know, QUALITY CONTROL...and I take my job VERY seriously! Particularly when chocolate is hips tell the rest of that story!

What a cute idea about the playdate! I run a playgroup and what a way to celebrate such a yummy snack:) Yum, I might have to try that recipe too!!!
