National Chocolate Chip Day

I just learned about National Chocolate Chip Day this year. I am a chocolate lover and cannot believe I have been missing out on such an important holiday. This holiday is celebrated every May 15th and I’m sure over the years I celebrated by gorging on something with chocolate chips in it without even knowing I was being festive. In honor of this special holiday, I and am hosting a play date with 30+ mommies and babies/toddlers. Each mommy is bringing a dish with chocolate chips in it and for the sake of National Chocolate Chip Day we will eat to our hearts content. Below is a yummy recipe from Taste of Home using chocolate chips.

Icebox Sandwiches

Ingredients:
1 package (3.4 ounces) instant vanilla pudding
2 cups cold milk
2 cups whipped topping
1 cup (6 ounces) miniature semisweet chocolate chips
48 graham cracker squares

Directions:
Mix pudding and milk according to package directions and refrigerate until set. Fold whipped topping and chocolate chips. Place 24 graham crackers on a baking sheet; top each with about 3 tablespoons filling. Place another graham cracker on top. Freeze for 1 hour or until firm. Wrap individually in plastic wrap; freeze. Serve sandwiches frozen.

Ooooooooooooooooo A Holiday that is RIGHT up my alley! I've got the chocolate consumption in honor of this day under control. I had to make some cookies for the Honor Society reception and by golly there were a few extras that I ended up with so I had to take care of them. You know, QUALITY CONTROL...and I take my job VERY seriously! Particularly when chocolate is involved......my hips tell the rest of that story!

What a cute idea about the playdate! I run a playgroup and what a way to celebrate such a yummy snack:) Yum, I might have to try that recipe too!!!
